In a large bowl, combine the packed light brown sugar, baking mix, lightly beaten eggs, toasted chopped pecans, melted and cooled butter, and pure vanilla extract. (Mix time: 5 minutes) Mix until just combined. Be careful not to overmix; a few lumps are fine.

Pour the batter into the prepared baking dish and spread evenly with a spatula. (Spread time: 2 minutes)

Bake in the preheated oven until the top is golden brown and the edges are set, approximately 25 to 30 minutes. (Bake time: 25-30 minutes) A toothpick inserted into the center should come out with moist crumbs attached.

Let the pecan squares cool completely in the baking dish on a wire rack before cutting into 2-inch squares. (Cool time: 1 hour)

Toasting the pecans before adding them to the batter really brings out their nutty flavor. Highly recommended!
For a richer flavor, try using dark brown sugar instead of light. It adds a molasses-like depth.
If you don't have baking mix on hand, you can make your own by combining flour, baking powder, and salt in the correct ratios. There are many recipes online.
These squares are delicious on their own, but they're also fantastic served warm with a scoop of vanilla ice cream or a dollop of whipped cream.
