In a large skillet, heat olive oil over medium-high heat. Add chicken and season generously with salt and pepper. Sauté until cooked through and golden brown, approximately 5 to 10 minutes. Remove chicken from skillet and set aside in a bowl, covered, to keep warm.

Reduce heat to medium. Deglaze the pan with chicken broth, scraping up any flavorful browned bits from the bottom. Stir in pesto and heavy cream. Simmer until the sauce slightly thickens, about 3 to 5 minutes. Incorporate 1/2 cup of Parmesan cheese, stirring until melted and smooth. Add spinach and tomatoes; cook until spinach begins to wilt, around 3 to 5 minutes.

Gently fold in tortellini and cooked chicken into the skillet. Continue cooking until tortellini is heated through and the sauce is bubbly, approximately 5 to 10 minutes. Sprinkle with the remaining 1/2 cup of Parmesan cheese. Serve immediately and enjoy!

For an extra layer of flavor, consider adding a squeeze of fresh lemon juice to the finished dish.
To elevate the presentation, garnish with fresh basil leaves and a drizzle of extra virgin olive oil.
Feel free to substitute sun-dried tomatoes for cherry tomatoes for a different twist.
If you don’t have heavy cream, half-and-half can be used, but the sauce won’t be as rich.
