Follow The Directions

01

Step

Prepare the Chicken: Spray a skillet with cooking spray and heat over medium heat. Add the diced chicken, season generously with salt and pepper. Cook, stirring occasionally, until the chicken is cooked through and no longer pink. Transfer to a plate and set aside. (Approximately 7 minutes)

02

Step

Sauté the Vegetables: Add the sliced onion and bell peppers to the same skillet. Increase the heat to medium-high and sauté until the vegetables are tender-crisp and slightly browned, stirring occasionally. (Approximately 5 minutes)

03

Step

Combine and Simmer: Mix in the diced tomatoes and green chiles (RO*TEL®) and the cooked chicken with the sautéed vegetables. Cook until most of the liquid has evaporated, allowing the flavors to meld together. (Approximately 2-3 minutes)

04

Step

Prepare the Cauliflower Rice: While the vegetables are cooking, microwave the frozen cauliflower rice according to the package instructions. Let it stand for 1 minute after microwaving. (Approximately 5 minutes)

05

Step

Assemble the Bowls: Carefully open the package of cauliflower rice and divide it evenly between two bowls. Top each bowl with the chicken and vegetable mixture. Garnish with shredded Cheddar cheese, diced avocado, salsa, and a dollop of sour cream.

For an extra layer of flavor, consider marinating the diced chicken in lime juice and fajita seasoning for at least 30 minutes before cooking.
Feel free to customize the toppings to your liking. Black olives, chopped cilantro, or a squeeze of lime juice would also be delicious additions.
If you prefer, you can use freshly made cauliflower rice instead of frozen. Simply pulse cauliflower florets in a food processor until they resemble rice, then steam or sauté until tender.
Spice it up: add a pinch of cayenne pepper to the chicken or a dash of your favorite hot sauce to the bowls.
