Feel free to add other vegetables such as zucchini or mushrooms to the mix.
If you don’t have leftover cooked chicken, you can quickly sauté some diced chicken breast until cooked through.
To enhance the flavor, toast the quinoa in a dry pan for a few minutes before adding it to the recipe.
