Follow The Directions

01

Step

In a medium bowl, whisk together the olive oil, 1/4 cup of chopped cilantro, chili powder, minced garlic, lime juice, and salt. (2 minutes)

02

Step

Add the shrimp to the marinade and toss to coat evenly. Cover and refrigerate for at least 20 minutes to allow the flavors to meld. (20 minutes)

03

Step

Heat a large skillet or cast-iron pan over medium-high heat. Spray lightly with cooking spray. (2 minutes)

04

Step

Add the sliced onion, green bell pepper, and serrano pepper (if using) to the hot skillet. Sauté until the vegetables are tender-crisp and slightly caramelized, about 8-10 minutes. (10 minutes)

05

Step

Remove the vegetables from the skillet and set aside in a bowl, covering with foil to keep warm. (1 minute)

06

Step

Add the marinated shrimp to the hot skillet in a single layer. Cook for 2-3 minutes per side, or until the shrimp are pink and opaque. Be careful not to overcook. (6 minutes)

07

Step

Return the sautéed vegetables to the skillet with the cooked shrimp. Toss to combine and heat through for another 1-2 minutes. (2 minutes)

08

Step

To assemble the fajitas, spoon the shrimp and vegetable mixture onto the warm flour tortillas. Top with shredded cheddar cheese, shredded lettuce, sour cream, diced tomatoes, and the remaining 1/4 cup of fresh cilantro. Serve immediately. (5 minutes)

For extra flavor, grill the bell peppers and onions before slicing.
If you don't have serrano peppers, a pinch of cayenne pepper can be substituted.
Serve with your favorite sides, such as guacamole, salsa, or rice and beans.
