Ensure the dumpling wrappers are kept covered with a damp cloth to prevent them from drying out while you're assembling the dumplings. You can prepare the dumplings ahead of time and freeze them. To freeze, place the assembled dumplings on a baking sheet lined with parchment paper, making sure they don't touch. Freeze until solid, then transfer to a freezer bag. Cook from frozen, adding a few extra minutes to the steaming time.
