In a blender, combine the crushed pineapple (with its juice), brown sugar, chipotle peppers (with adobo sauce), bourbon, nutmeg, and ginger. Blend until completely smooth. (5 minutes)

Using a sharp knife, score the ham in a diamond pattern, making diagonal cuts about 1 inch apart and 1/2 inch deep. Place the ham in a large bowl and pour the chipotle marinade over it, ensuring it's evenly coated. Cover the bowl tightly with plastic wrap and marinate in the refrigerator for at least 3 hours, or preferably overnight, flipping the ham occasionally. (10 minutes)

Preheat your oven to 375 degrees F (190 degrees C). (5 minutes)

Remove the ham from the marinade, shaking off any excess. Reserve the marinade. Place the ham in a roasting pan. Cook in the preheated oven for 30 minutes. (35 minutes)

While the ham is baking, bring the reserved marinade to a boil in a saucepan over medium heat. In a small bowl, whisk together the cornstarch and cold water until smooth. Gradually whisk the cornstarch slurry into the boiling marinade. Reduce the heat to low and simmer, stirring constantly, until the glaze thickens and becomes glossy, about 5 minutes. (10 minutes)

Remove the ham from the oven and generously spoon the glaze over the entire surface. Return the ham to the oven and continue cooking until the glaze is beautifully caramelized and an instant-read thermometer inserted into the thickest part of the ham, near the bone, registers at least 145 degrees F (65 degrees C), about 1 1/2 hours more. Baste the ham with the glaze every 30 minutes to build up layers of flavor. (1 hour 30 minutes)

For a deeper smoky flavor, consider adding a tablespoon of smoked paprika to the glaze.
If you prefer a milder heat, remove the seeds from the chipotle peppers before blending.
The glaze can be made a day in advance and stored in the refrigerator. Reheat gently before using.
Allow the ham to rest for at least 15 minutes before carving to allow the juices to redistribute, resulting in a more tender and flavorful ham.
