Follow The Directions

01

Step

Position an oven rack about 6 inches from the broiler and preheat. (5 minutes)

02

Step

Lightly coat the poblano pepper halves with vegetable oil and arrange them on a baking sheet, skin-side up. (2 minutes)

03

Step

Broil the peppers until the skin is blistered and blackened, rotating the pan as needed to ensure even charring. (10 minutes)

04

Step

Transfer the broiled peppers to a heatproof bowl and cover tightly with plastic wrap. Allow them to steam until cool enough to handle. (15 minutes)

05

Step

Once cooled, gently peel off the blackened skin from the peppers. (5 minutes)

06

Step

In a blender, combine the peeled poblano peppers, mayonnaise, lime juice, and minced garlic. Blend until smooth and creamy. (3 minutes)

07

Step

Add the roughly chopped cilantro, salt, and pepper to the blender. Pulse briefly until the cilantro is finely chopped and evenly distributed throughout the dressing, but the mixture still retains a slightly textured appearance. Avoid over-processing. (2 minutes)

For a smoother dressing, peel the peppers more meticulously, ensuring all bits of skin are removed.
Taste and adjust seasoning as needed. A pinch of sugar can balance the acidity if desired.
This dressing is best when used immediately, but can be stored in an airtight container in the refrigerator for up to 3 days. The color may fade slightly over time.
Consider adding a pinch of cumin or a dash of hot sauce for extra depth and complexity.
