In a medium saucepan over medium-low heat, combine the honey, brown sugar, coconut oil, vanilla extract, coconut extract, ground cinnamon, and salt. Stir continuously until the sugar is completely dissolved, creating a smooth and luscious syrup (about 3 minutes). Whisk in the cocoa powder until fully incorporated and the mixture is uniform in color.

In a large bowl, combine the toasted oat mixture and the warm honey-cocoa mixture. Stir thoroughly until all the dry ingredients are evenly coated in the sticky syrup. Transfer the mixture to the prepared baking dish and press firmly into an even, compact layer. A flat-bottomed measuring cup or spatula can be helpful for this step.

Bake in the preheated oven until the granola bars are golden brown and set, approximately 18 to 20 minutes.

Remove the baking dish from the oven and let the bars cool in the pan for 10 minutes. While still slightly warm, immediately cut the granola into squares of your desired size. Carefully remove the bars from the pan and allow them to cool completely on a wire rack before serving or storing.

For a richer chocolate flavor, add 1/4 cup of mini chocolate chips to the oat mixture before baking.
Feel free to substitute other nuts or seeds based on your preference. Chopped pecans, walnuts, or sunflower seeds would all work well.
Store these granola bars in an airtight container at room temperature for up to a week, or in the refrigerator for longer storage.
For chewier bars, slightly underbake them. For crisper bars, bake them for a couple more minutes.
