Step 3: Infuse with Spices (20 minutes) - Add the cumin, coriander, cardamom, turmeric, and salt. Stir well to coat the onions and spices, then add the diced jalapeños, chopped cilantro, lemon juice, and diced tomatoes with their juices. Scrape up any browned bits from the bottom of the pan to deglaze and add depth of flavor. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 20 minutes, allowing the flavors to meld together beautifully. For a richer flavor, allow the sauce to cool and rest for at least 30 minutes or up to a few hours before proceeding to the next step.
