In a large bowl, combine the warm water, pre-cooked cornmeal, shredded mozzarella cheese, butter, and salt. (5 minutes)

Knead the mixture with your hands until well combined and a soft, pliable dough forms. The dough should be moist but not sticky. If it's too dry, add a tablespoon of water at a time until the right consistency is reached. (5 minutes)

Place each ball between two sheets of plastic wrap. Using a rolling pin, gently flatten each ball into a disc, about 1/4 inch thick. (5 minutes)

While still leaving plastic wrap in place, use a cookie cutter or press the top edge of a cereal bowl or drinking glass into the surface of the dough to cut neat circles. Remove the plastic wrap and any excess dough scraps. (2 minutes)

Heat a griddle or large skillet over medium-high heat. Lightly spray with cooking spray or brush with oil. (2 minutes)

Working in batches, cook the arepas on the hot griddle until golden brown and slightly puffed up, about 5 minutes per side. (10-15 minutes)

Serve immediately and enjoy the comforting warmth and cheesy goodness of homemade arepas.

For a richer flavor, use salted butter or add a pinch of garlic powder to the dough.
If you don't have a griddle, a cast-iron skillet works perfectly.
Arepas are best served immediately while the cheese is still melted and gooey. You can keep them warm in a low oven (200°F) until ready to serve.
Experiment with different fillings! Try adding shredded chicken, black beans, or avocado for a heartier meal.
