In a large, deep skillet or Dutch oven, heat olive oil over medium-high heat. Add ground sirloin and sausage. Cook, breaking up the meat with a wooden spoon, until browned (approximately 5-7 minutes).

Add the chopped jalapenos, onion, and garlic to the skillet. Cook, stirring frequently, until the vegetables have softened (about 3 minutes).

Stir in the pepperoni, fire-roasted diced tomatoes, tomato paste, oregano, and water. Season generously with salt and pepper. Bring the mixture to a simmer, then reduce the heat to low and cook, uncovered, stirring occasionally, while you prepare the pasta.

Preheat oven to 350 degrees F (175 degrees C).

Bring a large pot of lightly salted water to a boil. Add the lasagna noodles and cook according to package directions until al dente (approximately 8 minutes). Drain the noodles well.

Lightly coat a 9x13-inch baking dish with cooking spray. Spread a thin layer of the meat sauce evenly over the bottom of the dish.

Arrange a layer of lasagna noodles over the sauce, overlapping as needed. Spread half of the ricotta cheese over the noodles, then sprinkle with 1/3 of the mozzarella cheese and 1/3 of the grated Parmesan cheese. Drizzle with 1/3 of the remaining meat sauce.

Repeat the layer: noodles, remaining ricotta cheese, 1/3 of the mozzarella, 1/3 of the Parmesan, and 1/3 of the sauce.

Top with a final layer of noodles, the remaining meat sauce, the remaining mozzarella cheese, and the remaining Parmesan cheese.

Bake in the preheated oven until the lasagna is heated through, the cheese is melted and bubbly, and the edges are lightly browned (about 40 minutes).

For a milder lasagna, remove the seeds and membranes from the jalapenos before chopping. For extra heat, leave them in!
Feel free to substitute other cheeses you enjoy, such as provolone or Monterey Jack.
The lasagna can be assembled ahead of time and refrigerated for up to 24 hours before baking. Add about 15 minutes to the baking time if baking directly from the refrigerator.
Let the lasagna rest for 10-15 minutes before cutting and serving.
