For a richer sauce, substitute half-and-half or heavy cream for part of the milk. If you prefer a thicker sauce, whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) during the last few minutes of cooking. Fresh or frozen peas can be substituted for canned peas. Cook fresh or frozen peas separately until tender before adding them to the sauce. Smoked salmon can be used for a bolder flavor. Serve with a side salad for a complete meal.
