Add spinach and crumble in Gorgonzola cheese. Season with salt and pepper and cook until spinach is wilted and sauce has thickened, about 4 minutes.

For an extra layer of flavor, consider adding a pinch of nutmeg to the sauce.

If you don't have shallots, yellow onion will work.
