While the couscous is cooking, heat the olive oil in a large skillet over medium-high heat. (1 minute)

Add the asparagus, green onions, and carrots to the skillet and sauté for about 5 minutes, until they are tender-crisp.

In a large bowl, whisk together the white wine vinegar, sugar, curry powder, minced ginger, and salt until the sugar is completely dissolved.

Add the cooked couscous mixture and the sautéed asparagus mixture to the bowl with the dressing.

Gently fold in the crumbled bleu cheese and sunflower kernels, ensuring they are evenly distributed throughout the couscous mixture. Serve warm or at room temperature.

For a richer flavor, try toasting the sunflower kernels lightly before adding them to the couscous.
If you don't have fresh ginger, 1/2 teaspoon of ground ginger can be substituted.
Feel free to experiment with other vegetables, such as bell peppers or zucchini, based on your preference and what's in season.
For a vegan version, omit the bleu cheese and add a sprinkle of nutritional yeast for a cheesy flavor.
