Bake in the preheated oven until the pork is slightly pink in the center and reaches an internal temperature of at least 145 degrees F (63 degrees C), approximately 2 hours. Use an instant-read thermometer inserted into the thickest part of the roast to ensure accuracy. (120 minutes)

Remove the roast from the oven and let it rest in a warm place for about 10 minutes before slicing and serving. This allows the juices to redistribute, resulting in a more tender and flavorful roast. (10 minutes)

For an extra layer of flavor, consider adding some caraway seeds to the sauerkraut before baking.
Serve with mashed potatoes, applesauce, and your favorite baked biscuits for a complete and satisfying meal.
You can enrich the dish by browning the pork loin in a skillet before placing it in the roasting pan.
Feel free to add your favorite type of sausage to the sauerkraut for added depth.
