Follow The Directions

01

Step

In a large bowl, combine the chicken chunks with olive oil, minced garlic, red pepper flakes, salt, and pepper. Toss well to ensure the chicken is evenly coated. (Prep time: 5 minutes)

02

Step

Heat a large pot or Dutch oven over medium-high heat. Add the chicken mixture and cook, stirring occasionally, until the chicken begins to brown on all sides (about 5 minutes). Add the sliced yellow bell pepper, sliced onion, diced zucchini, and balsamic vinegar. Cook until the onion starts to soften and becomes translucent (about 5 minutes).

03

Step

Stir in the sliced mushrooms and 1 tablespoon of chopped fresh basil. Continue to cook until the mushrooms have softened (about 5 minutes). Add the shredded mozzarella cheese and pesto sauce; toss to coat all ingredients evenly. Stir in the halved cherry tomatoes and cook until the tomatoes are warmed through and the cheese is melted and gooey (2-3 minutes).

04

Step

Spoon the chicken mixture generously into the toasted hoagie buns. Top each sandwich with 1/4 cup of crumbled feta cheese and 1 1/2 teaspoons of fresh basil. Serve immediately and enjoy! (Assembly time: 2 minutes)

For an extra layer of flavor, consider marinating the chicken in the olive oil, garlic, red pepper flakes, salt, and pepper mixture for at least 30 minutes before cooking.
Feel free to adjust the amount of red pepper flakes to your preference.
If you don't have Italian-style hoagie buns, any sturdy roll will work well.
For a richer flavor, use fresh homemade pesto.
Toast the buns until golden brown for added texture.
