For a thicker soup, use an immersion blender to partially blend the soup before serving.
Spice it up by adding a pinch of cayenne pepper or a dash of hot sauce.
If you don't have an Instant Pot, this recipe can easily be adapted for the stovetop. Simply simmer all ingredients in a large pot for 20-30 minutes.
