In a medium bowl, whisk together the flour, paprika, salt, and pepper. (5 minutes)

Add the beef cubes to the bowl and toss to coat evenly. (2 minutes)

Heat the olive oil in a Dutch oven or large heavy-bottomed pot over medium-high heat. (2 minutes)

Working in batches, sear the beef on all sides until deeply browned. Remove the beef from the pot and set aside. (15 minutes)

Add the beef broth, potatoes, mushrooms, carrots, onion, celery, Worcestershire sauce, garlic, and bay leaves to the pot. Stir to combine. (5 minutes)

Return the beef to the pot. Bring the mixture to a simmer, then reduce heat to low, cover, and simmer gently, stirring occasionally, until the beef and vegetables are very tender. (2 hours 30 minutes)

For an even richer flavor, use a combination of beef broth and red wine. Add 1 cup of dry red wine along with 3 cups of beef broth.
Adjust the amount of vegetables to your preference. Consider adding other root vegetables like parsnips or turnips.
For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water to form a slurry. Stir the slurry into the stew during the last 30 minutes of cooking.
This stew tastes even better the next day! Store leftovers in an airtight container in the refrigerator for up to 3 days.
