In a skillet over medium heat, combine ground beef, onion, garlic, salt, and pepper. Cook, breaking up the beef with a spoon, until browned and crumbly and the onion is translucent (approximately 10 minutes). Drain off any excess fat.

Line a baking sheet with parchment paper and lightly dust with flour. Place 15 wonton wrappers onto a lightly floured surface.

Spoon about 1 tablespoon of filling into the center of each wonton wrapper. Dip your index finger into the beaten egg yolk and brush a light coating around the edges of the wrapper. Place an unfilled wrapper on top of the filling, carefully aligning the edges. Gently press the two wrappers together to seal, squeezing out any trapped air. Pick up the ravioli and firmly pinch the edges together. Use a fork to crimp the edges, creating a decorative and secure seal. Place the finished ravioli onto the prepared parchment paper. Repeat to make the remaining ravioli.

Bring a large pot of lightly salted water to a rolling boil. Gently drop the ravioli into the boiling water in batches, being careful not to overcrowd the pot. Cook until the ravioli are tender yet firm to the bite (1 to 3 minutes). They will float to the surface when cooked.

Carefully remove the cooked ravioli from the pot using a slotted spoon. Drain well and serve immediately with your favorite sauce.

For a richer flavor, use a blend of ground beef and ground Italian sausage.
Feel free to experiment with different herbs and spices in the filling, such as nutmeg, oregano, or basil.
If baking the ravioli, preheat your oven to 375°F (190°C). Place the ravioli on a baking sheet and bake for 15-20 minutes, or until golden brown.
These ravioli can be served with a simple tomato sauce, a creamy Alfredo sauce, or a brown butter sage sauce.
To freeze the ravioli, place them in a single layer on a baking sheet lined with parchment paper and freeze until solid. Once frozen, transfer them to a freezer-safe bag or container. Cook directly from frozen, adding a few extra minutes to the cooking time.
