For an extra touch of flavor, add 1/2 cup of chopped walnuts or pecans to the batter.
If you prefer a sweeter bar, you can increase the sugar to 1 1/4 cups.
To prevent the bars from being too moist, make sure to squeeze out any excess moisture from the grated zucchini before adding it to the batter.
These bars can be stored in an airtight container at room temperature for up to 3 days.
