Follow The Directions
01
Step
In a large mixing bowl, whisk together 2 cups plus 2 tablespoons of all-purpose flour, yeast, sugar, and salt. (2 minutes)
02
Step
In a separate bowl, combine warm water and warm milk. (1 minute)
03
Step
Quickly whisk the wet ingredients into the dry ingredients until the batter is thick and smooth. (3 minutes)
04
Step
Cover the bowl with a towel and let it rise in a warm place until spongy, about 1 hour. (60 minutes)
05
Step
After rising, stir the dough to reduce sponginess. (1 minute)
06
Step
Place a rack into the oven and preheat to 150 degrees F (65 degrees C). (5 minutes)
07
Step
Spray a skillet and round metal open-top cookie cutters or crumpet molds with cooking spray. (1 minute)
08
Step
Heat the skillet over medium-low heat, place the metal cutters or molds into the skillet, and let the molds heat up. (2 minutes)
09
Step
Spoon the batter into the molds, filling them about halfway. (3 minutes)
10
Step
Let the crumpets cook until the bottoms are browned, the tops appear nearly dry, and popped bubbles appear on top, about 5 minutes. (5 minutes)
11
Step
Use tongs to lift the molds out of the pan; remove the molds from the crumpets. (2 minutes)
12
Step
Flip and return the crumpets to the skillet to cook the other sides until browned, 1 to 2 more minutes. (2 minutes)
13
Step
Repeat with the remaining dough. Keep the cooked crumpets warm on the rack in the preheated oven while you cook the remaining crumpets. (Time varies based on remaining dough)
For best results, use a thermometer to ensure your water and milk are within the specified temperature range.
If you don't have crumpet molds, you can use metal cookie cutters or even rinsed-out tuna cans with both ends cut off.
Cooked crumpets can be stored in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days. Reheat before serving.
Try adding a pinch of baking soda to the batter for extra fluffiness.
Experiment with different toppings such as honey, maple syrup, Nutella, or savory spreads like cream cheese and smoked salmon.
