Follow The Directions

Step

Preheat your oven to a blazing 450°F (230°C). (5 minutes)

In a large bowl, whisk together the flour, sugar, baking powder, and salt. (2 minutes)

Cut in the chilled shortening using a pastry blender or two knives until the mixture resembles coarse crumbs. (5 minutes)

Gently stir in the cold milk until just combined. Be careful not to overmix. (2 minutes)

Turn the dough out onto a lightly floured surface and knead briefly, just until it comes together, about 1 minute. (1 minute)

Divide the dough into two equal portions. Pat or roll each portion into a 3/4-inch thick round. (3 minutes)

Cut each round into 4 wedges. Arrange the wedges on a baking sheet, leaving a little space between each scone. (2 minutes)

Bake in the preheated oven until golden brown, approximately 15 minutes. (15 minutes)

For the flakiest scones, make sure your shortening and milk are very cold. You can even chill your dry ingredients beforehand!
Don't overmix the dough! Overmixing develops the gluten and will result in tough scones. Mix just until everything comes together.
Serve warm, preferably with butter and raspberry jam, for the full fair experience.
