Follow The Directions
01
Step
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season chicken generously with Adobo seasoning. (2 minutes)
02
Step
Cook chicken in the hot oil, flipping once, until golden brown on both sides and cooked through. (5-7 minutes)
03
Step
Transfer chicken to a plate and tent with foil to keep warm. (1 minute)
04
Step
Add the remaining 1 tablespoon of olive oil to the skillet. Add the chopped red onion and red bell pepper. (1 minute)
05
Step
Cook and stir until the vegetables are tender. (About 5 minutes)
06
Step
Stir in the drained and rinsed black beans and corn kernels. (1 minute)
07
Step
Continue cooking until everything is warmed through. (About 2 minutes)
08
Step
Remove the pan from heat. Stir in the chopped avocado, lemon juice, and fresh cilantro until well combined. (1 minute)
09
Step
Divide the chicken among 4 serving plates and top with the vibrant black bean mixture. Serve immediately. (2 minutes)
For an extra layer of flavor, consider adding a pinch of cumin or chili powder to the black bean mixture.
If fresh corn isn't available, frozen corn kernels work perfectly well. Just be sure to thaw them before adding to the skillet.
To prevent the avocado from browning, toss it with the lemon juice separately before adding it to the black bean mixture.
Adjust the amount of Adobo seasoning to your preference. Start with a smaller amount and add more as needed.
This dish is also delicious served over rice or quinoa for a heartier meal.
