Place 1/4 of the chicken mixture onto a tortilla. Fold and roll tortilla to completely enclose filling, then place it, seam-side down, in a small baking dish. Repeat to fill and roll remaining tortillas. Sprinkle the remaining cheese over top. (15 minutes)

Bake in center of the preheated oven until cheese is melted and tortillas are crispy. (20 minutes)

For an extra layer of flavor, consider marinating the chicken in lime juice and spices before cooking.
Feel free to adjust the amount of jalapeño to control the level of spiciness.
Serve with a side of guacamole and extra sour cream for dipping.
