Follow The Directions

01

Step

Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone liner (such as Silpat®). (5 minutes)

02

Step

Finely chop the almonds in a food processor until they resemble coarse crumbs. Be careful not to over-process them into a paste. Alternatively, chop by hand. (5-10 minutes)

03

Step

In a saucepan over medium heat, combine the butter, brown sugar, and honey. Stir until melted and dissolved. Bring to a gentle boil, then remove from the heat. (5 minutes)

04

Step

Whisk in the vanilla extract, salt, and flour until the mixture is smooth. Stir in the chopped almonds until well combined. (2 minutes)

05

Step

Drop rounded spoonfuls of batter (about 2 teaspoons or 15 grams each) onto the prepared baking sheet, spacing them evenly. Gently shape the cookies, ensuring they are uniformly sized. (5 minutes)

06

Step

Bake in the preheated oven for 10 to 12 minutes, rotating the pan halfway through, until the cookies are golden brown and slightly darker around the edges.

07

Step

Remove from the oven and slide the silicone liner with the cookies onto a countertop. Let cool until crisp, about 3 to 5 minutes, before gently peeling the cookies off the liner. Repeat with remaining batter. (5-10 minutes)

08

Step

Spread melted chocolate over the flat side of half the cookies. Top with the remaining cookies, flat-side down, to create sandwiches. Gently press to seal. (10 minutes)

09

Step

Let the assembled cookies sit until the chocolate has firmed up, about 30 minutes.

For an extra touch, sprinkle the melted chocolate with chopped nuts or sea salt before it sets.
Store the finished cookies in an airtight container at room temperature for up to a week.
Feel free to experiment with different types of nuts, such as pecans, walnuts, or hazelnuts.
Dark chocolate or white chocolate can be used instead of semisweet chocolate.
Ensure your oven is properly preheated for even baking.
