Bring the mixture to a boil over high heat, then reduce the heat to low, cover, and simmer gently for 2 to 3 hours, or until the beans are very soft and creamy. Cooking time can vary depending on the age and variety of the beans, so it may take up to 5 hours. Check the water level periodically and add more if necessary to keep the beans submerged. (Variable: 120-300 minutes)
