In a large pot, combine the washed pinto beans, smashed garlic cloves, and water. Ensure the beans are fully submerged. Cover the pot and bring to a gentle simmer over medium-low heat. (5 minutes)

Allow the beans to cook slowly, maintaining a low simmer, for approximately 5 1/2 hours, or until they are exceptionally tender. Stir in the salt and continue cooking for another 30 minutes to allow the flavors to meld. Check water level periodically and add more if needed to keep the beans covered. (6 hours)

Heat the canola oil in a large skillet over medium-high heat until shimmering. (2 minutes)

Carefully spoon the cooked beans, along with some of their cooking liquid, into the skillet. Using a potato masher or the back of a spoon, begin to mash the beans, incorporating the liquid as you go, until they reach your desired consistency – either smooth and creamy or slightly chunky. Continue cooking, stirring frequently, until the beans have thickened and the excess liquid has evaporated. (8 minutes)

For an even richer flavor, try using bacon fat or lard instead of canola oil.
If you prefer a smoother texture, you can use an immersion blender to puree the beans after mashing.
Refried beans can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a little water if needed to restore the desired consistency.
Experiment with adding different spices and seasonings to customize your refried beans. Cumin, chili powder, and smoked paprika are all excellent choices.
