Sear and baste: Heat a cast iron skillet over medium-high heat. Drizzle steak with olive oil and sear until well-browned (about 4 minutes). Flip, then add shallots, garlic, thyme, and butter to the skillet. Cook to desired doneness (4-5 minutes more for medium-rare). Rest steak for 5 minutes before slicing thinly.

Make the dressing: Whisk together lemon juice, lemon zest, olive oil, honey, salt, and pepper in a small bowl until emulsified.

Assemble the salad: Thinly shave fennel and toss with juice from 1/2 lemon. Add apple, mint, parsley, and cilantro. Drizzle with dressing and toss gently. Season with salt and pepper. Arrange steak slices on top of the salad and garnish with roasted shallots, pomegranate seeds, and chopped hazelnuts.

For best results, allow the spice rub to sit on the steak for at least 30 minutes before cooking. This allows the flavors to penetrate the meat.
Feel free to adjust the herbs in the salad to your liking. Dill or chives would also be delicious additions.
If you don't have hazelnuts, walnuts or pecans can be substituted.
Hanger steak is best served medium-rare to medium.
