Heat a large skillet over medium heat. (2 minutes)

Combine butter, parsley, Pecorino Romano cheese, and garlic in a small bowl. (2 minutes)

Lightly coat 1 side of each bread slice with butter mixture; flip. Top 2 bread slices with provolone and mozzarella cheese; place remaining 2 bread slices, buttered-sides up on top. (3 minutes)

Cook on one side until golden brown, 3 to 4 minutes. Flip; cook on second side until cheese melted and golden brown, 3 to 4 minutes more. Cut sandwiches in half; serve. (8 minutes)

For an extra layer of flavor, consider adding a thin spread of pesto to the inside of the sandwich.
Use a combination of cheeses for a more complex flavor profile. Gruyere, fontina, or even a touch of sharp cheddar would be excellent additions.
Be careful not to burn the garlic butter while cooking. If the bread is browning too quickly, reduce the heat slightly.
Serve immediately for the best melted cheese experience!
