Follow The Directions

01

Step

Preheat oven to 250 degrees F (120 degrees C). (5 minutes)

02

Step

Arrange tomatoes, cut-side up, in a shallow baking dish. Drizzle with olive oil, then sprinkle evenly with crushed garlic, dried oregano, sugar, and salt. (10 minutes)

03

Step

Bake in the preheated oven for 1 hour.

04

Step

Turn tomatoes over and continue baking until deeply caramelized and very soft, approximately 1 to 1 1/2 hours. (5 minutes)

05

Step

Remove from the oven and allow to cool to room temperature, about 1 hour.

06

Step

Transfer the tomato mixture to a blender or food processor. Purée until smooth and creamy. (5 minutes)

For an even richer flavor, use roasted garlic instead of fresh.
The spread can be stored in an airtight container in the refrigerator for up to a week.
Try adding a pinch of red pepper flakes for a touch of heat.

Next time, I'll try roasting some shallots along with the garlic for a more complex flavor.

I added a bit of balsamic vinegar at the end for a tangy twist. Delicious!
