For a smoother texture, you can grind the fish and vegetables multiple times.
If you prefer a sweeter gefilte fish, add more sugar to the mixture or the broth.
The fish skins add a rich, gelatinous quality to the broth. If you don't have fish skins, you can substitute with fish bones or heads.
Serve chilled with horseradish and carrot slices.
