Follow The Directions

01

Step
5 mins

In a large, heavy-bottomed pot, combine the ground pork fat, ground pork, finely chopped onions, water, ground cloves, and nutmeg. Season generously with salt and black pepper to your liking. (5 minutes)

02

Step
2 mins

Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and gently simmer. As it cooks, use a potato masher to break down the mixture every 15 minutes, ensuring a smooth consistency. (1.5 hours)

03

Step
1 hrs 30 mins

Continue simmering until the pork is exceptionally tender, adding water as needed to prevent the mixture from drying out. Towards the end of the cooking time, reduce the liquid as much as possible without allowing the mixture to burn, concentrating the flavors. (30 minutes)

04

Step
1 hrs 30 mins

Carefully transfer the hot pork spread to lidded containers. Allow it to cool slightly before refrigerating. (10 minutes)

05

Step
10 mins

Refrigerate for at least 8 hours, or preferably overnight, to allow the flavors to meld and the spread to set. (8-12 hours)

06

Step
8 hrs

Before serving, remove and discard any solidified fat layer on top, if desired. Alternatively, stir the fat back into the spread for an even creamier texture.

For a smoother consistency, you can use an immersion blender to further refine the spread after cooking. Be careful when blending hot liquids.
Adjust the amount of cloves and nutmeg to your preference. A pinch of allspice can also add a warm, complex note.
This spread can be stored in the refrigerator for up to 5 days.
Serve with crusty bread, crackers, or even as a filling for savory pastries.
