Follow The Directions

01

Step

Sort black beans and place into a large container. Cover with several inches of cool water; let soak, 8 hours to overnight.

02

Step

Rinse and drain the soaked black beans.

03

Step

Combine the rinsed black beans, chicken broth, diced tomatoes, carrots, onion, red bell pepper, garlic, cumin, salt, chili powder, jalapeño pepper, and black pepper in a slow cooker.

04

Step

Cover and cook on High until mixture has reduced and beans are tender, about 8 hours.

05

Step

Stir in the corn and brown sugar 1 hour before serving, allowing the flavors to meld.

For a vegetarian version, substitute vegetable broth for chicken broth.
Adjust the amount of jalapeño pepper to your preferred level of spiciness.
These beans can be easily customized with other vegetables such as zucchini or bell peppers.
