Stir in the flour into the beef mixture, ensuring it's well combined. Gradually whisk in the milk, stirring constantly to prevent lumps. Season with salt and pepper to taste. Bring to a simmer and cook until the sauce has thickened slightly, about 2-3 minutes. Stir in 1 cup of the Cheddar cheese, olives, and pimentos. (8 minutes)

Gently fold the cooked noodles into the beef and cheese sauce. Transfer the mixture to a lightly greased casserole dish. Sprinkle the remaining 1/4 cup of Cheddar cheese over the top. (5 minutes)

Bake in the preheated oven for 35-40 minutes, or until the casserole is bubbly and the cheese is melted and lightly browned. Let stand for 5-10 minutes before serving. (40 minutes)

For an extra layer of flavor, try browning the ground beef with a dash of Worcestershire sauce.
Feel free to substitute the Cheddar cheese with your favorite cheese blend, such as Monterey Jack or Colby Jack.
Add a crispy topping by mixing breadcrumbs with melted butter and sprinkling over the casserole before baking.
This casserole can be assembled ahead of time and stored in the refrigerator for up to 24 hours. Add an extra 10-15 minutes to the baking time if baking from cold.
