Use organic grapefruits to avoid any unwanted chemicals from the zest. Adjust the cooking time to achieve your preferred marmalade consistency. The longer it cooks, the thicker it will become. For a less bitter marmalade, remove more of the white pith from the grapefruits. Experiment with adding a splash of Grand Marnier or other citrus liqueur at the end of cooking for an extra layer of flavor.
