Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the cubed sweet potato and cook, stirring occasionally, until they begin to soften (about 5 minutes).

Add the chopped red onion and minced garlic to the skillet. Continue cooking until the onions become translucent and start to caramelize, approximately 7 minutes. Season with chipotle chile powder, ground cumin, ground coriander, salt, and pepper. Stir to combine. Transfer the mixture to a bowl and cover to keep warm.

Pour 2 tablespoons olive oil into the same skillet and return to medium heat. Carefully crack the eggs into the skillet. Cook until the whites are set but the yolks are still runny, about 3-4 minutes. For over-easy eggs, gently flip them halfway through cooking.

Place the cooked eggs on top of the sweet potato hash. Garnish generously with fresh cilantro, crumbled feta cheese, and slices of avocado. Serve immediately.

For an extra layer of flavor, consider adding a pinch of smoked paprika to the sweet potato mixture.
If you prefer a spicier dish, increase the amount of chipotle chile powder.
Ensure the eggs are cooked to your liking – the runny yolks add richness to the dish.
The hash can be prepared in advance and reheated, but the eggs are best cooked fresh.
