Combine all ingredients – cilantro, garlic, ginger, green chile, peanuts, salt, and lemon juice – in a food processor. (2 minutes)

If the mixture is too thick, add water, one teaspoon at a time, until desired consistency is reached. (1-2 minutes)

Taste and adjust seasoning as needed, adding more salt or lemon juice to brighten the flavors. (1 minute)

For a milder chutney, remove the seeds from the green chile before mincing.
Toasted peanuts provide a richer flavor. Toast them lightly in a dry pan before adding to the food processor.
Store leftover chutney in an airtight container in the refrigerator for up to 3-4 days. The color may fade slightly over time, but the flavor will remain delicious.
