For a smoother texture, you can use a food processor to pulse the peas instead of mashing them by hand. Be careful not to over-process them into a puree.
Feel free to experiment with different cheeses. Pecorino Romano or Asiago would also work well.
Add some finely chopped fresh herbs, such as mint, parsley, or dill, to the pea mixture for added flavor and freshness.
These patties can be made ahead of time and stored in the refrigerator for up to 24 hours before frying.
For a vegan version, substitute the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, let sit for 5 minutes to thicken) and use a plant-based Parmesan cheese or nutritional yeast.
