Follow The Directions

01

Step

In a bowl, combine olive oil, rosemary, thyme, and crushed garlic. Cover and let sit for at least 2 hours to infuse flavors. (Prep time: 2 hours)

02

Step

Preheat an outdoor grill for medium-high, indirect heat. Lightly oil the grill grate.

03

Step

Place potato wedges in a large saucepan, cover with salted water, and bring to a boil over medium-high heat. Cook until mostly tender, about 8-9 minutes. (Cook time: 8-9 minutes)

04

Step

Drain the potatoes and transfer to a large bowl. Remove and discard the garlic from the infused oil. Pour the infused oil over the potatoes.

05

Step

Season with garlic salt and freshly ground black pepper. Toss to coat evenly.

06

Step

Place the potato wedges, skin-side down, on the preheated grill over direct heat. Reserve the remaining oil. Grill for about 10 minutes. (Grill time: 10 minutes)

07

Step

Move the potato wedges to indirect heat and continue grilling until fully cooked, approximately 5-10 minutes more. (Grill time: 5-10 minutes)

08

Step

Transfer the grilled potato wedges to a serving bowl and drizzle with the reserved oil.

For a smoky flavor, add a handful of wood chips to your grill.
Experiment with different herbs like oregano or parsley to customize the flavor profile.
Ensure the potatoes are mostly tender before grilling to achieve a crispy exterior and fluffy interior.
