Follow The Directions

01

Step

Soak the chickpeas: Place the dried chickpeas in a large bowl and cover with several inches of cool water. Let soak for at least 8 hours, or preferably overnight. (Soaking Time: 8+ hours)

02

Step

Combine ingredients in the slow cooker: Drain and rinse the soaked chickpeas. Transfer them to a slow cooker. Place the ham bone on top of the chickpeas, then pour in the water (or broth), ensuring the ingredients are covered. (Prep Time: 15 minutes)

03

Step

Slow cook: Cover the slow cooker and cook on Low for 8 hours. (Cook Time: 8 hours)

04

Step

Add vegetables and ham: After 8 hours, skim off any foam or impurities that have risen to the surface of the soup. Carefully remove the ham bone from the slow cooker. Once it's cool enough to handle, strip all the meat from the bone. Discard the bone and return the ham to the slow cooker. Stir in the halved potatoes, chopped carrots, and frozen corn. Season with freshly ground black pepper to taste. (Prep Time: 20 minutes)

05

Step

Finish cooking: Cover the slow cooker and cook on Low for 1 hour, then increase the heat to High and cook for an additional 1 hour, or until the potatoes are tender. (Cook Time: 2 hours)

For a smoky flavor, use a smoked ham bone.
If you don't have a ham bone, you can substitute 1-2 cups of diced ham or smoked sausage.
Feel free to add other vegetables like celery, onions, or diced tomatoes.
Adjust the amount of water (or broth) to achieve your desired soup consistency.
Garnish with fresh parsley or a dollop of sour cream before serving for added flavor and visual appeal.
