Bring a large pot of salted water to a boil. Add the diced potatoes and cook until tender but still firm, approximately 15 minutes. Drain well, cool slightly, and set aside.

Place the chopped bacon in a large, deep skillet (cast iron recommended). Cook over medium-high heat until crispy and the fat is rendered. Add the chopped onion, green bell pepper, minced garlic, diced tomatoes, and cooked potatoes. Season generously with sea salt and freshly ground black pepper. Cook until the vegetables are softened, stirring occasionally, about 5 minutes.

Evenly sprinkle the Cheddar cheese over the vegetable and bacon mixture in the skillet. Gently crack the eggs into the pan, spacing them a couple of inches apart. Reduce heat to medium-low, cover the pan tightly, and cook until the eggs reach your desired level of doneness (runny yolks approximately 8-10 minutes, firm yolks approximately 12-15 minutes).

Remove the pan from the heat. Let rest for 2-3 minutes before serving directly from the skillet. Serve hot.
