Recipe View On the fifteenth day it is ready to be used for baking. Reserve one cup of the starter in the refrigerator and continue to follow the stir and feed cycle (Stir once a day for four days, stir and feed on the fifth day, ready for use on the tenth day.)

Always use non-reactive containers and utensils (glass, plastic, or wood) to avoid affecting the starter's flavor and activity.
The ideal temperature for fermentation is around 70-75°F (21-24°C). If your kitchen is colder, the starter may take longer to activate.
If you notice a layer of dark liquid forming on top (hooch), it's a sign that the starter is hungry. Simply stir it back in before feeding.
Don't be afraid to experiment with different flours to create unique flavor profiles in your sourdough.
