Bake the cookies: Scoop 1 tablespoon of batter onto the prepared baking sheet and spread it into a 4-inch circle using the back of a spoon. Repeat once more, ensuring the circles are well-spaced. (2 minutes)

Bake until golden: Bake in the preheated oven until the edges are crispy and golden brown, while the centers remain pale, approximately 10 minutes. (10 minutes)

Shape the fortunes: Working quickly, lift one cookie using a spatula and place a fortune in the center. Fold the cookie in half, gently pressing the edges together. Bend the long side of the cookie in half over the rim of a baking sheet, pulling the ends down on either side. Curl the ends towards each other to create the signature fortune cookie brim. Place the shaped cookie in a ramekin or muffin tin to maintain its form while cooling. Repeat immediately with the second cookie. (30 seconds per cookie)

Repeat and cool: Continue scooping and baking the remaining batter in batches of two cookies. Remember to work swiftly, folding and shaping the cookies while they are still hot. Once completely cooled, remove the cookies from the ramekins or muffin tins. (2 minutes)
