In a spice grinder or using a mortar and pestle, combine the dried parsley, fennel seeds, salt, black pepper, garlic granules, Italian seasoning, dried minced onion, and crushed red pepper flakes. Grind or crush until the mixture is finely ground and fragrant. (5 minutes)

In a large bowl, gently combine the ground pork with the prepared spice mixture, ensuring even distribution. Shape the mixture into a log and slice into four patties, approximately 1/2-inch thick. (10 minutes)

Heat a drizzle of olive oil in a skillet over medium heat. Add the sausage patties and cook for 4 minutes, until browned on the bottom. Flip the patties and cook for another 4 minutes, or until the internal temperature reaches at least 160 degrees F (73 degrees C). (8 minutes)

For an extra layer of flavor, try browning the sausage patties in a skillet with a knob of butter and a sprig of fresh rosemary or thyme.
Feel free to adjust the amount of red pepper flakes to control the heat level of your sausage.
These patties can be made ahead of time and stored in the refrigerator for up to 24 hours before cooking.
