Pour about 1/3 cup of the prepared marinade over the chicken, ensuring each piece is well coated. Season with a pinch of sea salt. Seal the bag or cover the bowl tightly and marinate in the refrigerator for at least 8 hours, or preferably overnight, to allow the flavors to meld. Reserve the remaining marinade for basting during cooking. (10 minutes)

Arrange the marinated chicken in a baking dish, discarding any excess marinade. Cover the dish tightly with aluminum foil to retain moisture. (2 minutes)

Bake in the preheated oven for 20 to 25 minutes. Remove the foil, turn the chicken pieces over, and generously baste with the reserved marinade. Re-cover with foil and bake for another 20 to 25 minutes. (50 minutes)

Remove the foil once more and continue baking until the chicken is cooked through, the juices run clear when pierced with a fork, and an instant-read thermometer inserted near the bone registers 165 degrees F (74 degrees C), approximately 15 to 20 minutes. (20 minutes)

Let the chicken rest for 5-10 minutes before serving.

For an extra layer of flavor, consider adding a splash of white wine vinegar to the marinade.
If grilling, marinate as directed, then grill over medium heat, basting frequently with the reserved marinade, until cooked through.
Adjust the amount of chili powder and red pepper flakes to suit your spice preference. A little goes a long way!
