If you prefer a less sweet salad, reduce the amount of sugar to 1 1/2 cups. Yukon Gold potatoes hold their shape well, but red potatoes or fingerling potatoes are also good choices. To make ahead, prepare the salad completely and store it in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave before serving.
