Adjust the amount of Cajun seasoning to your preference. For a milder flavor, use a smaller pinch or substitute with a dash of your favorite hot sauce. Make sure the oil temperature is consistent. If it's too low, the hush puppies will absorb too much oil and become greasy. If it's too high, they'll brown too quickly on the outside and remain undercooked on the inside.
