For best results, use high-quality ice cream. The flavor of the ice cream will be the prominent flavor in your muffins. Feel free to experiment with different ice cream flavors! Chocolate, strawberry, coffee, or even mint chocolate chip would be delicious. If you don't have self-rising flour, you can make your own by combining 2 cups of all-purpose flour with 3 teaspoons of baking powder and ½ teaspoon of salt. Store cooled muffins in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 5 days.
