Sear the Chicken: Turn on your Instant Pot and select the 'Saute-High' function. Once the display reads 'hot,' add avocado oil. Sear the chicken thighs until golden brown, about 3-4 minutes per side. Transfer the seared chicken to a plate and set aside. (10 minutes)

Saute Aromatics: Add the chopped onion and minced garlic to the Instant Pot. Saute for 1-2 minutes, until softened and fragrant. Pour in half of the chicken stock and use a wooden spoon to scrape up any browned bits from the bottom of the pot, deglazing it. Cancel the Saute function. (5 minutes)

Pressure Cook: Add the quartered tomatillos, chopped jalapeno, and the remaining chicken stock to the pot. Place the seared chicken thighs back on top of the tomatillo mixture. Close and lock the lid of the Instant Pot. Select the 'High Pressure' setting and set the timer for 10 minutes. Allow 10-15 minutes for the pressure to build. (25 minutes)

Prepare Chipotle-Lime Mayonnaise: While the chicken is pressure cooking, prepare the chipotle-lime mayonnaise. In a small bowl, combine the chipotle mayonnaise, chopped cilantro, lime zest, and lime juice. Mix well and set aside. (5 minutes)

Release Pressure: Once the cooking time is complete, carefully release the pressure using the quick-release method, following the manufacturer's instructions. This should take approximately 5 minutes. Unlock and remove the lid. (5 minutes)

Assemble and Serve: Remove the cooked chicken thighs from the Instant Pot and place them on serving plates. Spoon the onion-tomatillo mixture over the chicken. Top each serving with a generous dollop of the chipotle-lime mayonnaise and slices of fresh avocado. Serve immediately and enjoy! (5 minutes)

For a spicier dish, leave the seeds in the jalapeno or add a pinch of cayenne pepper to the chicken seasoning.
If you don't have chipotle mayonnaise, you can make your own by mixing regular mayonnaise with a small amount of adobo sauce from a can of chipotle peppers.
Serve with rice, quinoa, or a side of tortillas for a complete meal.
The tomatillo sauce can be blended after cooking for a smoother consistency, if desired.
